About Us


Southern Oaks Rehabilitation & Healthcare provides a wide range of skilled nursing and rehabilitation services for both short stay recovery, as well as ongoing supportive services for individuals requiring long-term care. Our focus is on improving the quality of life for those we serve through our orthopedic, neurological, cardiac, pulmonary, wound care services as well as interventions for other medically complex diagnoses, admitting 24 hours a day, 7 days a week. We can help avoid readmission to the hospital when a patient goes home to quickly by offering caring staff with 24/7 assistance and quality therapy to insure a smooth transition. With our Team Care approach, we will work to make the transition home smooth and safe.

Heart Healthy Breakfast Scramble is on the menu this week! With just 4 ingredients and under 20 minutes of cooking and prep time, a quick and easy breakfast is perfect! Keep your heart healthy and strong with this one❤️

Ingredients:
1 lowfat smoked sausage link
3 C thawed shredded hash brown potatoes
1 can Hunt's Diced Tomatoes with basil, garlic, and oregano
16oz carton of liquid egg beaters
Chopped fresh parsley, garnishment

Directions:
1 tbsp olive oil in pan over medium high heat.
Cut sausage lengthwise then slice crosswise and add to skillet along with potatoes.
Cook approximately 7 minutes or until both the sausage and potatoes are evenly browned.
Pour diced tomatoes into a bowl, microwave on high 1-2 minutes, add to sausage mixture.
Add egg beaters to skillet and cook until the eggs are set to your liking. Stir evenly.
Spoon out portions onto plate and garnish with parsley.
